On July 27th, the eve of Fiestas Patrias, a palpable sense of anticipation fills the air. Families and friends gather for a traditional dinner known as "la víspera," which often includes dishes such as causa rellena (a layered potato dish) and ají de gallina (a creamy chicken stew).
As night falls, the streets come alive with colorful parades and lively music. Children wave Peruvian flags and dance to the rhythm of traditional songs, while adults share stories of the country's struggle for independence.
Independence Day: El Día de la Independencia
On July 28th, the official Independence Day, the celebrations reach their peak. In the morning, a solemn ceremony is held at the Plaza Mayor in Lima, where the president delivers a speech and the Peruvian flag is raised.
